Jamaican Sunrise Pina Colada
This recipe takes me right back to the sunny days in Jamaica, where I sunbathed on the beach everyday soaking up every bit of Caribbean sunshine. Every ingredient in this recipe embodies a tropical vacation. As a matter of fact, whenever I make this smoothie, it’s hard not to close my eyes and daydream about the blue ocean waves splashing up against my feet and the smell of Coppertone tanning lotion all around me. The use of light coconut milk lightens up this typically caloric drink and lends to a wonderful nutty flavor. The frozen pineapple chunks gives the drink a smoothe and creamy texture. In addition to using greek yogurt instead of the standard sorbet or ice cream, the tartness from the yogurt lends the drink a slight sweet and sour contrast. Greek yogurt also provides a punch of protein that makes this smoothie not only a tasty treat for a summer day, but also a satisfying one that will keep your hunger at bay. Jamaican Sunrise Pina Colada
Serves 1
1 cup skim milk
1/8 cup light coconut milk
1/2 frozen banana
1.5 cups frozen pineapple chunks
2 tablespoon plain greek yogurt
1 scoop vanilla protein powder (optional)
1. Mix all ingredients in a blender and blend until smooth or until you reach a desired consistency.
