Sweet BBQ Chicken Sandwich
To celebrate 4th of July, I decided to forgo the standard hot dog and hamburger and create tasty bbq chicken sandwiches. This flavorful sandwich combines the sweetness of the BBQ sauce with the spiciness of the pepperjack cheese. Toss leftover cooked chicken with barbecue sauce for a quick and healthy lunch.
Sweet BBQ Chicken Sandwich
1 cup boneless shredded chicken
1 slice pepperjack cheese
2 romaine lettuce leaves
2 slices tomatos
2 red onion ring
1 honey wheat hamburger bun
2 tablespoon bbq sauce
1/2 tablespoon stone ground mustard
Directions
Grill chicken and shred into pieces. Combine BBQ sauce and chicken and set aside. Toast hamburger bun and spread a thin layer of mustard on one side. Layer romaine lettuce, chicken mixture, tomatoes, and cheese on a toasted bun. Place under broiler until cheese melts. Serve with a dill pickle and chips.

Now this is what I call a sandwich. I won’t be waiting until July 4th to try it out!
