Cheesy Bacon Biscuits
Recently B and I saw an episode of “The Best Thing I’ve Ever Ate” on Food Network and the main food that was featured was BACON! Even though he only enjoys specific Food network shows with me, I knew he would like this one so I DVRed it, and although he protested to watching it, he agreed to watch a couple minutes of it. Well, let me tell you, he was glued to the TV for the entire 30 minute show. He was definitely in food heaven. I don’t have bacon lying around the house very often, instead I always opt for turkey bacon which is leaner and still produces that nice crispy texture like bacon. He doesn’t mind the substitute, but in return for his willingness, I have to include bacon in a lot of meals. Well, besides being in food heaven for a good 30 minutes, he also has a growing list of resturants in LA they featured on the show that supposedly has amazing bacon dishes. The one I found most intriguing was the restaurant “Animal”, which features bacon in their desserts! This healthy rendition of a classic southern staple is the perfect comfort food served alongside a bowl of soup.
Cheesy Bacon Biscuits
6 biscuits
1.5 cups Heart Healthy Bisquick mix
1/2 cup skim milk
1 teaspoon garlic powder
2 tablespoons shredded cheese (I used a Mexican blend of light cheddar and mozzarella)
2 pieces turkey bacon finely chopped
Directions
1. Combine Bisquick mix with skim milk and garlic powder until it resembles a thick dough.
2. Add in the shredded cheese and chopped pre-cooked turkey bacon. Mix well
3. Spray muffin tins with cooking spray and put into a 350 degree oven for 15 minutes until the top becomes golden brown
*You can add jalapenos to this mix for a spicy kick
