Part III: BBQ Chicken Pizza
Okay, last pizza! This is the classic bbq chicken pizza, simple and straightforward and it couldn’t get any easier. Just as with the two other pizzas, I used pita bread for the doughy base. I really love pita bread and actually am kind of obsessed with this kind of pita by western bagel. Obsessed like whenever I see it at the market, I stock up, as in I buy out the store’s entire stock. No joke. B thinks I’m crazy and our freezer is constantly filled to the brim with these pitas. Hey, what can I say? They are so versatile and make great easy meals! Oh and the fact that only ONE store that I know of near me carries these babies adds to my addiction. Anyways, this Bbq chicken pizza packs so much flavor from the spicy bbq sauce, cheddar cheese, corn, chicken and feta. Each bite will definitely give you a little kick! I think this was B’s favorite pizza out of the 3; I might have turned him away from the traditional pepperoni and cheese pizza?!
BBQ Chicken Pizza
Serves 1
1 whole wheat pita
1/4 cup store bought BBQ sauce (I love Trader Joe’s natural bbq sauce, so spicy!)
1/4 cup light shredded cheddar cheese
1/4 cup diced red onion
1/2 cup cooked chopped chicken breasts
1/4 cup corn kernels
2 tablespoons feta cheese
cilantro for garnish
Directions
1. Preheat oven to 350 degrees
2. Grill pita on both sides until warm, about 1 minute
3. Top pita with bbq sauce, a layer of cheese, cooked chicken, diced red onion and corn. Bake for 5 minutes until cheese is melted. Top with feta cheese and cilantro
