Cranberry-Granola Blondies
Hey guys, sorry for the lack of posting! My laptop got a virus (blue screen of death) 2 weeks ago so I haven’t been able to upload my pictures until my new laptop comes in. I’ve still been cooking, baking and taking pictures though! I’ve actually been baking a lot more now, I prefer cooking because it seems less technical and it you can easily substitute ingredients you have on hand. I’ve been using my running groups as test subjects for my baked goods! Runners are very willingly to try anything after a long run
A bunch of people asked me what makes this a blondie, and honestly, I had to look this one up. A blondie is pretty much a brownie without the chocolate. Brownies rely on the chocolate for flavor, but blondies use brown sugar for their distinctive molasses flavor. These granola blondies are chewy, moist and the perfect treat post-run. The ingredients are simple and minimal making these blondies perfect for anytime of the day. Whip up an extra batch for when you need a quick snack or breakfast on the go!
Cranberry-Granola Blondies
Makes 20 bars
Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/4 cups packed light brown sugar
- 1/4 cup unsweetened applesauce
- 3 large egg whites
- 2 cups low-fat granola cereal
- 1 cup dried cranberries, or chopped dried tart cherries
Directions
- Preheat oven to 350°F. Coat a 9-by-13-inch baking dish with cooking spray.
- Whisk together flour, baking powder and salt in a small bowl. Beat together sugar, applesauce and egg whites in a large bowl with an electric mixer on high speed until smooth. Add the dry ingredients and beat on low speed just until blended. Stir in granola and dried fruit.
- Transfer the batter to the prepared baking dish; smooth the top. Bake until golden brown on top and they feel set when lightly pressed in the center, 20 to 25 minutes. Let cool in the baking dish on a rack. Cut into 20 bars.
