Coconut & Cranberry Energy Bars

These energy bars are so simple to make with very minimal ingredients. Here is a great energy bar to make at home instead of paying for an overpriced box of trail mix-style bars. I made these for my running group last week and everyone loved this sweet treat after a sweaty night run. The peanut butter and honey naturally sweetens up these bars without any other added sugar. You can use chocolate or carob chips for the coconut or add in more dried fruit. The sesame seeds gives these bars a nice crunch and texture. Feel free to mix and match ingredients in this recipe-either way they will turn out delicious!
Coconut & Cranberry Energy Bars
Serves 12
Ingredients
- 1 cup peanut butter
- 1/2 cup honey
- 1/4 teaspoon vanilla extract
- 2/3 cup dried cranberries or raisins
- 3 tablespoons sesame seeds
- 1/3 cup shredded coconut
- 3 cups puffed brown rice cereal
Directions
- Grease an 8×8 pan with cooking spray
- In a large bowl, mix together the peanut butter, honey and vanilla extract until well-combined.
- Add the dried fruit, sesame seeds and coconut and combine thoroughly with the peanut butter mixture.
- Gradually add the puffed brown rice cereal to this.
- Thoroughly mix with your hands. Firmly press the mixture into the prepared 8×8 pan; you’ll need to wet your hands slightly, otherwise the mixture just sticks to them.
- Cover and refrigerate for a couple of hours, then cut and serve.
