No Butter Chocolate Cookies with Caramel
I had a hankering for homemade cookies over the weekend. Specifically, chocolate cookies. Not chocolate chip cookies, but warm chewy chocolate cookies. I realized I had two big tubs of unsweetened cocoa powder, but no butter! Cookies without butter? Yes, it can be done! The result was chewy hot delicious chocolate cookies. Totally satisfied my craving. Next time I am dunking these into a cup of hot chocolate for the ultimate chocolate indulgence. I suggest sprinkling a little sea salt on top of the caramel while it’s still hot for that salty/sweet kick.
Chocolate Cookies with Caramel
1 1/2 cups all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt + a pinch to sprinkle over
1/4 cup granulated sugar
1/2 cup packed light brown sugar
1/2 cup vegetable oil
1 large egg
1 teaspoon vanilla
1/2 cup unsweetened cocoa powder
12 caramels, unwrapped and cut in half
Preheat oven to 350 degrees F.
In a mixing bowl, stir together the dry ingredients: flour, soda, cocoa powder and salt.
In a separate bowl, whisk together both sugar, oil, egg and vanilla. Add flour mixture to oil mixture and stir just until blended.
Using a tablespoon measure, scoop up dough and shape into tight round balls and flatten them out with the palm of your hand. Press half a piece of caramel in the center of each cookie. Space them about 2 inches apart on parchment paper. Bake for 8-10 minutes and let cool before eating.
