Part I: Thai Chicken Pizza

So, I went a little crazy last night with pizza ideas and kept coming up with different varieties of pizzas to make. Fortunately if you can believe it, making 3 pizzas only took me 30 minutes! I used store bought whole wheat pitas for a doughy, crispy base instead of hand making my own pizza dough. Who has all that time to spend kneading dough? Plus, using these pitas allowed me to make more pizzas because of the smaller size. This first pizza is a Thai chicken pizza with tons of color and flavor. I made a peanut sauce to slather on the bottom and topped the pizza with chopped chicken, bell peppers, green onions and shredded carrots. It was like an explosion in your mouth from all the different flavors and textures. I stayed away from the traditional pizza with red sauce, meat and cheese because you can make so many more interesting pizzas with some creativity! All these pizzas were inspired by the fact that I needed to clean out my fridge before I leave for SF tomorrow. Can you tell I’m a little OCD with letting food spoil and go to waste? Groceries are not cheap these days! The measurements for all these pizzas are rough, I don’t really measure my toppings, just kind of eye ball it until I feel it is enough. I do have to say, this pizza would have been even more awesome if I had some siracha sauce to drizzle over the top, but nevertheless, it was an excellent meal. Enjoy!

Thai Chicken Pizza

Serves 1 (or 2 if you’re willing to share)

Peanut Sauce

  • 2 tablespoons smooth natural peanut butter
  • 1.5 tablespoons water
  • 1 teaspoons reduced-sodium soy sauce
  • 1 teaspoons rice vinegar1 teaspoons minced fresh ginger
  • 1 clove garlic, minced
  • 1 teaspoon red pepper flakes

1/4 chopped red bell pepper

1/4 cup shredded carrots

2 scallions

1/4 cup light shredded cheese

1/2 cup chopped cooked chicken breasts

1 whole wheat pita

Directions

1. Whisk peanut butter, water, soy sauce, vinegar, ginger, red pepper flakes and garlic in a small bowl until well combined.

2. Grill pita on both side for 1 minute until grill marks appear, don’t leave it on the grill for too long or it gets really crunchy!

3. Put peanut sauce on pita, top with cheese and the rest of the ingredients. Bake in a 350 degree oven for 5 minutes until cheese is melted. Top with sliced scallions.
