Part II: Shrimp Caesar Pizza

This is probably my favorite pizza out of the three I made last night. I had some leftover caesar dressing from the night before so I used that as a sauce. Luckily for me, B doesn’t like shrimp so I didn’t have to share this pizza 🙂 In the process of cleaning out my fridge, I don’t always have the ingredients I really want, but with a little improvising I came up with some easy substitutions. I thought the pizza would be pretty bare with just shrimp and romaine lettuce so I dug into my freezer and found some edamame peas. Sounds weird, but it really worked! I heated them up and topped them on the pizza. It lended to a nice firm texture, and since the flavor is so subtle, it didn’t contrast with the rest of the dish. This pizza didn’t even have to go in the oven. I just grilled the pita bread until warm and topped it with the Caesar dressing, edamame peas, cold shrimp, romaine lettuce, diced red onion and a sprinkle of Parmesan cheese. It was divine!

Shrimp Caesar Pizza

Serves 1


  • 2 tablespoons reduced-fat mayo or plain greek yogurt
  • 1 tablespoons Parmesan cheese
  • 1/2 clove garlic, minced
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 tablespoon lemon juice
  • 1/2 teaspoon balsamic vinegar

1 whole wheat pita

1/4 cup chopped red onion

1/4 cup chopped romaine lettuce

1/4 cup edamame

10 medium cooked shrimp, chilled

1 tablespoon Parmesan cheese


1. Grill pita on both sides until grill marks appear, about 1 minute

2. Top pita with dressing, shrimp, red onion, edamame, romaine lettuce and a sprinkle of Parm
