Mozzarella-Stuffed Turkey Burgers

September 16, 2009

These tasty turkey burgers, served on toasted sourdough bread and dressed with marinara sauce, is the perfect comfort food. I used up the last portion of my lean ground turkey from last night to create these Mozzarella-Stuffed turkey burgers. The shredded mozzarella combined with basil melts perfectly inside the burgers. This is a great meal to prep beforehand and leave in the fridge. You can make the burger patties and grill them up when you are ready to eat.

Mozzarella-Stuffed Turkey Burgers

Makes 2 servings

Marinara Sauce

  • 2 teaspoons extra-virgin olive oil
  • 1/2 small onion, finely chopped
  • 4 cloves garlic, minced
  • 1 can diced tomatoes
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 teaspoon freshly ground pepper

Burgers

  • 1/2 pound 93%-lean ground turkey
  • 2 tablespoons finely chopped scallions
  • 2 teaspoons minced garlic
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon freshly ground pepper
  • 1/4 teaspoon salt
  • 2 tablespoons egg substitute
  • 1/4 cup shredded part-skim mozzarella cheese, divided
  • 2 teaspoon dried basil
  • 2 teaspoons extra-virgin olive oil
  • 4 slices sourdough bread, toasted

Directions

1. To prepare marinara: Heat 2 teaspoons oil in a medium saucepan over medium heat. Add onion and garlic, cover and cook, stirring frequently, until translucent, 5 to 7 minutes. Stir in tomatoes, 1/2 teaspoon salt and 1/2 teaspoon pepper. Bring to a simmer and cook, stirring occasionally, until the tomatoes have broken down, 8 to 10 minutes.
2. To prepare burgers: Place turkey, scallions, garlic, Worcestershire sauce, egg, oregano, pepper and salt in a large bowl. Gently combine, without overmixing, until evenly incorporated. Form into 4 thin patties about 4-inches wide.
3. Combine 1/4 cup cheese and basil and place an equal amount in the center of 2 patties. Cover with the remaining patties and crimp the edges closed.
4. Heat grill to medium-high heat, add burgers and cook, turning once, 8 to 10 minutes total.
5. Warm the marinara on the stove. To assemble the burgers, spread 1.5 tablespoons of marinara on each toasted bread, top with a burger, and about 1.5 more tablespoons of marinara.
