Vegetable Slaw with Honey-Lemon Dressing

September 24, 2009

Carrots and broccoli slaw make this a refreshing dish to complement any meal. The toasted walnuts gives this salad an earthy flavor with amazing textures to balance out the sweetness of the dressing. For a quick and healthy side, make a couple portions of this to eat for the rest of the week. You can easily combine this slaw with some protein for a satisfying lunch, or top it on your usual sandwich for some extra crunch. I usually don’t care for carrots, but when combined with this amazing dressing, I’ll be happy to eat my carrots.

Vegetable Slaw with Honey-Lemon Dressing

2 servings, about 3/4 cup each

  • 1 tablespoons walnut oil or canola oil
  • 1 tablespoons lemon juice
  • 1/2 tablespoon honey
  • 1/2 small shallot, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1 cup shredded carrots, (about 2 medium)
  • 1 cup broccoli slaw
  • 1/4 cup chopped walnuts, toasted

  1. Whisk oil, lemon juice, honey, shallot, salt and pepper in a large bowl. Add carrots, slaw and walnuts; toss to combine.
