Chicken with Balsamic BBQ Sauce

Usually, because of time constraints, I buy organic BBQ sauce from the grocery store. Who has time to make their own homemade BBQ sauce? The ingredients are actually fairly simple, and surprisingly it doesn’t even take that long to cook! You just let all the ingredients simmer on a stove for 15 minutes until it becomes a syrupy-like consistency. The thick and tangy BBQ sauce is even better than all the bottled versions. I made some extra sauce to have on hand for sandwiches and other things I can smother in BBQ sauce. It’s addicting though, and you’ll find yourself licking the spoon clean trying to get every last bit of sauce. Serve with a side of Spinach Salad and Ginger Soy Dressing.

Chicken with Balsamic BBQ Sauce

Serves 4

Ingredients

For the Balsamic BBQ sauce:

  • 1 cup balsamic vinegar
  • 3/4 cup ketchup
  • 1/4 cup brown sugar
  • 2 garlic clove, minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

For the chicken:

  • 4 pieces chicken breasts
  • Salt and freshly ground pepper

Directions

Combine all the ingredients for the sauce in a small saucepan and stir until all the ingredients are incorporated and the mixture is smooth. Simmer over medium heat until reduced by 1/3, about 15 to 20 minutes.

For the chicken:

Place a grill pan over medium heat. Season the meat with salt and pepper. Lightly coat with some of the BBQ sauce using a pastry brush. Place the meat on the grill. Place the remaining BBQ sauce, still in the small saucepan, over low heat and allow to gently simmer while the meat cooks.

Cook the chicken about 8 minutes per side. Continually brush the meat with BBQ sauce every few minutes. Remove the meat from the grill and let rest for at least 5 minutes. Serve with the heated BBQ sauce alongside.
