Chicken Tortilla Soup

After last weekend’s layover in the San Francisco airport, I was inspired to make a similar homemade chicken tortilla soup that I had from San Francisco Soup Company. I can’t believe I’ve never tried making this soup before, it’s so easy and tasty! I love ordering tortilla soup after a long night out, something about the warm comforting rich soup just makes everything better. Many people associate making soups as an all-day affair, but here is a great way to use up pantry staples and have a soup ready in no time. Some vegetables, lean chicken and broth is all you need for this delicious Tex-Mex favorite. To make this dish even quicker, use already baked tortilla chips in place of the homemade tortilla strips. Serve with lime wedges.

Chicken Tortilla Soup

Serves 4


  • 4 soft corn tortillas, cut into 1-by-2-inch strips
  • 1 tablespoon extra-virgin olive oil
  • 1 pound boneless, skinless chicken breast, trimmed of fat and diced
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 1 tablespoon ground cumin
  • 2 14-ounce can reduced-sodium chicken broth
  • 1 15-ounce can diced tomatoes, preferably with fire roasted chilis
  • 1/4 teaspoon freshly ground pepper
  • 2 tablespoons lime juice
  • 1/2 cup chopped fresh cilantro
  • Salt and pepper


  1. Preheat oven to 350°F. Spread tortillas in a single layer on a baking sheet, sprinkle with salt. Bake until lightly browned and crisp, 10 to 12 minutes.
  2. Meanwhile, heat oil in a Dutch oven over medium-high heat. Add chicken and cook, stirring occasionally, until beginning to brown, 3 to 4 minutes. Add pepper, onions, cumin, salt and pepper to the pot. Cook, stirring occasionally, until the onions are lightly browned, about 4 minutes. Add broth, tomatoes and lime juice; bring to a simmer and cook, stirring often, until the vegetables are tender, about 15 minutes. Remove from the heat; stir in cilantro. Serve topped with the toasted tortilla strips.
