Golden Crusted Maple Brussels Sprouts

I thought I’d share my all-time favorite brussels sprouts recipe with you.  I’ve never even heard of brussels sprouts before as a kid, so I can’t tell you how I got converted to eating these leafy green vegetables. I do know that brussels sprout has gotten a bad rap over the years, what is it with this poor vegetable? Try this simple recipe to bring out the vegetable’s natural sweetness and great flavor. You end up with vibrant green, tender brussels sprouts that become deeply golden and crusty where they touch the pan. This is the only way to eat brussels sprouts: cut in half and cooked until deliciously tender inside and perfectly brown and crusted on the outside. The roasting flavor of the Brussels sprouts paired with the sweetness of the prunes and maple is a great combination. This dish is so easy to make yet it packs a powerful aroma when serving. This dish would complement any main course meal-fish, chicken, pork, beef.

Golden Crusted Maple Brussels Sprouts

Ingredients

  • 2 Cups Brussels Sprouts ( halved )
  • 6 dried prunes, chopped
  • 1 Tbsp. Olive Oil
  • 1/2 Cup Chicken Stock
  • 1/4 Cup Maple Syrup
  • Salt and Pepper

Directions

  1. Preheat oven to 400 Degrees F.
  2. On baking sheet, coat halved Brussels sprouts olive oil and salt and pepper and spread out evenly for roasting.
  3. Roast for 20 minutes until done.
  4. In a small sauce pan, add chicken stock and prunes and bring to a boil.  Then turn to simmer and let reduce.  Add maple syrup and continue to let it reduce for 10-15 minutes.
  5. Once the Brussels sprouts are fully roasted, remove the pan from the oven and pour the maple mixture on top.  Toss to coat evenly and serve.
