Gnocchi Mac N Cheese

Here’s a super simple recipe when you’re in a hurry. B loves gnocchi so I always make sure to pick up a package of gnocchi in the shelf-stable aisle at Trader Joe’s. There are so many different variations and ways you can dress this soft, melt-in-your-mouth pasta dish. Sometimes, I like to use a basic homemade tomato sauce, or my favorite low-fat version of pesto and mix it in with the gnocchi. You can add fresh chopped spinach and sautéed mushrooms or shredded chicken, prosciutto, turkey sausage for a healthy dose of protein. This has become my go-to recipe when I’m in a time crunch and I need to put food on the table fast.

In this dish, I sautéed some olive oil with chopped garlic and red pepper flakes until it became fragrant. Tossed in the cooked gnocchi, shredded chicken and 1/2 cup feta cheese. Make sure you use the real kind of feta for the most flavor. I used to buy this low-fat version of crumbled feta, but it doesn’t taste the same. Since this dish has so minimal ingredients, it is really important to use the best quality ingredients to maximize all the flavors. The end result is a thick and creamy pasta dish that tastes rich and delicious, but healthy in every way. You can add some milk to thin it down if you think it is too thick, but the feta melts real nicely with the hot gnocchi. Top with some breadcrumbs for a twist on the classic mac & cheese. Enjoy!

Gnocchi Mac N Cheese

Serves 4

Ingredients

  • 1 package gnocchi
  • 2 tablespoons olive oil
  • 1 teaspoon red pepper flakes
  • 1 tablespoon chopped garlic
  • 1/2 cup-3/4 cup crumbled feta
  • 1 cup shredded rotisserie chicken
  • Freshly ground pepper
  • Toppings (optional): breadcrumbs

Directions

1. Cook gnocchi according to package, drain.

2. Heat olive, garlic and red pepper flakes in a medium saucepan. Add in cooked gnocchi and shredded chicken and combine.

3. Turn heat off and mix in cheese and season with pepper.

    That’s so awesome. I learned to make gnocchi late last year and I’ve been trying to pair with different kinds of sauce. I never figured mac and cheese into the equation. I9 do like the choice of feta. This one’s a keeper.
