15 Minute Dinner: Pesto & Feta Stuffed Chicken Rolls

Sorry I’ve been very MIA lately with recipes, food adventures & running shenanigans. Lots of updates and big news this week-so check back! I leave you with this recipe that I whipped up this weekend after a long day out and this was all I had in the fridge. It turned out delicious! Usually I would make my own pesto, but this Trader Joe’s pesto is so flavorful and convenient when you don’t want to whip up your own batch of pesto.

Serve the chicken alongside a mixed greens salad or slice the chicken on top of a bowl of whole wheat pasta. Heat up the leftovers for a tasty sandwich anytime of the day. Pounding out the chicken makes holding the cheesy stuffing easy. Browning the chicken in a skillet before baking gives it a beautiful golden crisp color. Make this decadent dish in no time!


Serves 4

  • 4 boneless, skinless chicken breasts, (1-1 1/4 pounds total)
  • 1/4 cup homemade or store bought pesto sauce
  • 1/4 cup feta cheese
  • 2 tablespoons olive oil
  • Salt and pepper


1. Preheat oven to 400°F. Lightly coat a baking sheet with sides with cooking spray.
2. Using a meat tenderizer, pound out chicken breasts until thin. Salt and pepper one side of the chicken. Spread 1 tablespoon of the pesto and feta on each chicken breast and roll up.Repeat with remaining chicken breasts and filling.
3. Heat oil over in a large nonstick skillet medium-high heat. Add chicken seam side down and cook until browned on one side, about 2 minutes. Transfer chicken to the prepared baking sheet, browned-side up, and bake until it is no longer pink in the center, about 10 minutes.
