Comfort Food made Simple: Coconut Curry Chicken

The cooler weather usually has me craving a hot bowl of soup on a blistery day. This is the perfect remedy to any cold day and the leftovers taste just as good the next day. You can use any Thai seasoning or curry paste in this dish. The chicken is slowly simmered in coconut milk and broth with an abundant of fresh vegetables. Feel free to switch up the vegetables with whatever you have on hand. You can even use lentils or chickpeas instead of chicken for a vegetarian alternative. This dish is best served with fresh Naan bread or Jasmine or Basmati rice.
