Oatmeal Raisin Cookies

December 12, 2011

These are some delicious cookies to bring to a holiday party. I figured this year I am going to make homemade cranberry-orange jam in a jar for everyone with a nice loaf of crust French bread. It’s so simple to make, just mix everything up and bake in the oven. Feel free to add chopped nuts or other dried fruits to this mix. I kept it simple with old fashioned oatmeal and raisins. These cookies turn out so thick and chewy, the perfect little mid-day snack or nighttime dessert.

Old Fashioned Oatmeal Raisin Cookies

  • 1 stick of butter
  • 1 cup brown sugar
  • 1/2 cup turbinado sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1.5 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 3 cups old fashioned oats
  • 1 cup raisins

1. Preheat oven to 350°F (175°C).

2. In a large bowl, cream together the butter, sugar, egg and vanilla until smooth. In a separate bowl, whisk the flour, baking soda, cinnamon and salt together. Stir this into the butter/sugar mixture. Stir in the oats and raisins.

3.The cookies should be two inches apart on a parchment-lined baking sheet. Bake them for 10 to 12 minutes, taking them out when golden at the edges but still a little undercooked-looking on top. Let them sit on the hot baking sheet for five minutes before transferring them to a rack to cool.
